At least once a month during the summer, we head up to Okoboji for the weekend. While most of the weekend is relaxed and unstructured, there are a few things I consistently do on every trip. I wake up for a walk to the closest coffee shop on Saturdays, and a walk to Wyman’s Spudnuts on Sundays.
They are not dense or cakey, flattened or chewy, but a crispy, airy slab of sugar. They are “the legendary potato-based doughnut from another lifetime”. Your choices for frosting are vanilla, chocolate, blueberry glaze and maple. And while they have a few toppings, like sprinkles and bacon, DON”T do anything but the coconut crunch. My good ol’ friend vanilla-frosting-coconut-crunch never lets me down. Some people rendezvous with oily, hot bodies of the opposite sex, I wake up early to sneak down to Spudnuts alone.
Wyman’s is the only location in Iowa so you’ll need to endure the long line for the prize. But damn grl, it’s worth it.
